Cayenne pepper is used as a spice in cooking. It goes well with any meat and seafood, and adds piquancy to stews, casseroles, sauces and especially cheese. You can also mix in with flour for deep fried, roasted or grilled meats to give a pungent, earthy, peppery kick.
FACTS
The spice Cayenne is produced by drying and finely grinding a specific hot pepper commonly called 'Bird Chilli (Capsicum minimum or Capsicum baccatum) however the most cayenne powders are blends of different hot peppers.
